Nowruz — New Day — is the Persian New Year, celebrated at the spring equinox and observed by over 300 million people across Iran, Central Asia, the Caucasus, and diaspora communities worldwide. It is one of the oldest celebrations in human history, with roots in Zoroastrian tradition going back at least 3,000 years. The central ritual is the Haft-Seen table — seven items each beginning with the letter S — including sabzeh (sprouted wheat or lentils, vivid green), sib (apples), and serkeh (vinegar). The palette reflects the season and the spirit: the vivid green of new growth, the turquoise that appears in Persian tilework and jewellery, the gold of the sun returning, the white of fresh beginnings.
